Journal photos by Lloyd Mullen Making American food with a French twist By LLOYD MULLEN Iloyd@masoncounty. com With a new wife and barely a dollar in his pocket, Niel Rogers made the voyage from Wales to New York in 1988 to pursue his dream of becoming a top chef in America. Rogers spent three months in upstate New York before he landed a job cooking for a summer camp. Shortly after starting at the camp, its closure was announced. "I got a call from a friend in LA to work as a sous chef," Rogers explained. "I took the job and flew the next day." Rogers started at Cafe Katsu, a "more than great neighborhood restaurant," according to a Los Ange- les Times article from 1988. Rogers spent six years perfecting his trade at the Los Angeles resthurant before the owners sold it. "I didn't like the new owners, so I opened my own (restaurant) and called it Kafe Bizou," Rogers said. Philip Gris was Rogers' partner in the new ven- ture. The duo opened the new cafe and within four months they had outgrown their space. More than 20 years and two additional cafes lat- er, Rogers sold his restaurant and moved to Shelton. This time Rogers brought with him his wifem, Laura, sons Sam and Brandon, and their friends True Neely and Richard Klingdail. "I had to get out of LA, it was making me crazy," Rogers exclaimed.
