3 broiler-fryer chickens, cut in serving p4eces
2~ cups packaged corn flake crumbs
1 tablespoon salt
I/z teaspoon pepper
Aluminum foil
I cup evaporated milk
Combine corn flake crumbs with salt and popper in pie
plate or shallow baking dish. Line 2 shallow baking shee~s
or pans with aluminum foil. Dip chicken pieces in
evaporated milk then roll immediately in seasoned corn
flake crumbs. Place chicken pieces, skin side up, in foil-
lined Pan; do not crowd. Bake in a moderate oven (350
c~roes F.) ll/~ hours, or until tender. At the end of one
hour, exchange place of pans on shelves; continue to
bake. No need to cover or turn chicken while cooking.
YIELD: 12 servings.
