Fleury is in the kitchen baking by 4
am. and said sleep sometimes comes
as early as 7 p.m. when baking is a
full—time job.
“That’s baking six days a week, I
haven’t hired anybody; and I don’t in-
tend to because I’d like to keep this
working out of my home,” Fleury said.
Fleury has spent her life in Mason
and Kitsap counties and has become a
staple of the Belfair Saturday Market.
“I just appreciate the support, ap—
preciate my friends and that commu-
nity. The market has been amazing,”

When the market is not being host—
ed, Fleury posts a weekly “Roll Call”
in several community Facebook groups
from Allyn to central Kitsap County to
let people know what she has available
and where she will be distributing.

directly to arrange meet-up times to
pick up orders.

24'to 48 hours for custom orders to be
fulfilled because of the nature of dough
rising.
“People get excited about having
heirloom family starters,” Fleury said. >
“It is a nice tradition, people are going
back to their roots, they are going back
to biblical times. To the times that our
forefathers made bread without man—
made‘ yeast.”
