Critical violations: It was observed that cooked
beef, one made at 9:30 a.m. and another at
a.m., was between F improperly cooling,r in
large lidded metal containers that were full. These
were stored at the bottom of the make table. It was
observed that chopped chicken at 60 F, beef at (56
and cabbage at 66 F were out on the counter at
room temperature. Wooden spoon in hand sink next
to prep area making washing hands inaccessible.
Chopped chicken at 55 F and thawing chopped
beefat 51 F observed in the bottom of make table
improperly cold holdng 41 F. Raw chicken being
prepped in the back area was observed at 55 F im-
properly cold holding over 41 F.
