This week I have found an excellent
Mexican restaurant in an unusual location. But
I am almost hesitant to inform readers of it.
Mexican eateries tend to deteriorate when
discovered. Popularity has changed, for the
worse, several of the inexpensive
hole-in-the-wall restaurants that I once enjoyed
in Seattle during my days as a graduate student.
Its consequences have ranged from the
cooling of plates on which food is served, to the
drying out of beef in tacos, even to franchising
and the opening of second restaurants serving
food from "exactly the same recipes" that is
never the same.
But the people at Palitos in Shelton assure
me that it can resist these aftereffects. I hope
so, for is it a find!
The restaurant is located, a block east at
Henry Gay's newspaper office, typically in a
building that once housed such unlamented
~redecessors as The Cota Grill and The
turgeon.
Decor is almost true to form -- a few rather
~arriSh paintings, a sombrero on one wall, plus a
ge snorting air conditioner in the corner of
the main dining room.
There is also a jukebox, on which the staff
and bar patrons repeatedly play Donna Fargo's
"Happiest Girl in the Whole U.S.A." On this
week's visit, my date and I discussed various
ways in which it could be silenced.
But a jukebox and noisy air conditioner are
appropriate in a Mexican restaurant. It should
be simple, setting to serve what Craig Claiborne
has described as "earthy food, festive food,
happy food.., peasant food raised to the level
of high and sophisticated art."
That is exactly what you get in Shelton --
large sizzling plates, heaping with food that is
pleasing to the palate and sits well in the
stomach. (The latter consideration is important,
with a 9D-minute drive back to Seattle.)
How to begin a visit to Palitos? With
margaritas, as the restaurant lacks my two
favorite Mexican beers, Dos Equis and Corona.
But drinks are lemony and tasting also of their
healthy shot of tequila.
There's the nice touch of chips and hot
sauce at the start of your meal. Not chips that
had been sitting long on a grocer's shelf~ but
freshly fried little numbers that are macle on
the premises.
Entrees are such at Palitos that you don't
really need an appetizer. But, my job being
to test as much as possible, we ordered a green
chili cheese tortilla ($1.25) and a bowl of red
chili.
About the size of a small pizza, the tortilla
is made with a mild cheddar cheese. It is chewy
and particularly tasty when dipped in hot
sauce.
The chili, while very lightly seasoned (you
can order it otherwise), was deliciously thick
and brimming with large chunks of beef.
As one of our maln entrees, we chose menu
offering "No. 6" -- the combination of a chili
relleno, an enchilada, retried beans, and rice.
After having fasted all day, my date was
able to consume only about half of her vast
plate of food. She then leaned back, stared at
the ceiling, rubbed her stomach and smiled.
Her chili relleno was that good -- in the
expert baking that kept its egg meringue
coating from turning to goD, the beefy chili in
its stuffing, and the tasty peppers and tomatoes
that gave it added character. A frequently
served, easily ruined dish, in this case
excellently done.

Menu: Mexican food, entrees in
$3.50-4.50 range and worth it.
Hours: 4-11 p.m., Monday-Wednesday;
11:30 a.m.-11 p.m., Thursday; 11:30
a.m.-midnight, Friday; noon-midnight,
Saturday; 4-10 p.m., Sunday.
R eservations: They're sometimes
crowded on weekends, so it might be
best to call ahead. Also for larger
parties.
Only slightly less successful was the
Chimichanga wh ch is rather like a giant beef
burrito -- in this case served with a bed of
lettuce, sour cream, guacamole, green onions,
shredded cheese and tomatoes.
The centerpiece was delightfully crisp and
stuffed with lots of moist and tasty shredded
beef. Its garnishments were also enjoyable, save
for an overdoese of sour cream and not enough
guacamole.
After all this we were in no mood for
dessert... Only a cup of unfortunately sour
coffee to help with tfle long drive back to the
city.
But, particularly on hearing that the only
dessert available was a piece of apple pie, I
would suggest that Palitos add flan to its menu
-- the carmelized custard that is so popular in
Mexico.
Palitos displayed to us only a few flaws. It
comes highly recommended also by friends
who stop there tor dinner on the way back
from the ocean.
(The restaurant is also an excellent place to
get away from steak-chopping solons when
you're in Olympia during a session of the
legislature.)
The food does run to that which Mexican
restaurants normally serve to Americans. But it
fills you up, leaves you satisfied, and sits well
all the way back to Seattle.
