Re-grand opening at T’s Cafe Friday By Kirk Boxleitner KIJOX/el'trier@)/nasoncouz iry. com When co-owners 'l‘heresa and Rick Landsiedel opened T’s Cafe at 118 Third St. in Shelton, they had one week of table ser— vice before they had to shift en~ tirely to a delivery-only model. but that didn’t deter them. “I have always told people, we can get there from here," Theresa Landsiedel said. “We had already planned to other deliveries, and we got hit with so many that it floored us. We actually had to hire more staff to keep up, and even though our business traffic has slowed down since then, we have not been closed for one day.” The Landsiedels are accus- tomed to toughing it out, having bided their time for six years, waiting tor the opportunity to open their own cale. For the past half-dozen years, the couple has collected unique curios and knicknacks to deco- rate the establishn'ient they both hoped to start, and in the past three years. they’ve got— ten more serious by snapping up bigger—ticket: appliances and storing them in their garage. Bel'ore they moved into their current location, the Landsie— dels managed to acquire a two— door commercial refrigerator. :1 display case, an espresso ma~ chine and grinder, and a sand— wich and deli preparz‘ltion ma— chine. “We waited until we’d already moved in to order the exact size of shelving we would need,” The- resa said. “By sheer r_:oincidence, we found this place had three appliances we didn’t already have; a range hood, an oven and grill, and a three-compartment sink." I like making people’s lives better, and I’m passionate about col'l'ee.” In the months T’s (late has been open, Landsiedel has kept track ol‘ which menu ollerings are her customm's~ favorites, from the California club for its bacon and avocado, and the chiv potle. turkey for its homemade chipotle sauce combined with another round of avocado, to the Lumberjack with dijon mustard and mayonnaise (“an amazing combo”), and the B—Master with horseradiin sauce and mayo (“like a prime rib"). liandsiedel acknowledged that. “comfort food“ might be a slightly overused term, but it’s one she deemed accurate in describing the purpose of her menu’s ollerings. “We grill all our sandwiches, although you can order them without them being grilled," Landsiedel said. “And we not only make all our own sauces, but also make our own butter— milk and chipotle ranch dress- ings.” T’s late plans to celebrate its reopening in conjunction with National Cheeseburger Day with an 11:30 a.m. Friday ribbon—cutting, introducing a cheeseburger to the establish— ment’s menu, as well as serv— ing up samples of mini—danishes and London Fog iced tea. “We made 140 box lunches tor the PUD picnic, so we can han— dle those orders,” said Landsie— del, who encouraged customers to call 'l"s Cafe at 360—462—1888.
