Winter squash, while na-
tive to the Americas, is now
grown in much of the world
and there are hundreds of varieties
cultivated from Asia, Africa and Eu-
rope. They are named winter squash,
even though they are harvested in
the fall, because they will hold up to
storage and last through the dark,
cold days of winter. They are the per-
fect cool-weather vegetable as their
bright orange flesh adds abit of color
to any dish long after the hot weather
crops of summer are out of season.
Fall weather is the perfect time
for transitioning to wonderful hearty
and warming soups. I typically don’t
make many soups in the summer
but find myself craving their warmth
as soon as the leaves start turning
and falling. My favorite fall soup is
a squash soup that is both delicious
and easy.

There won’t be a COVID-19 second-
half property tax due-date extension,
according to Mason County Treasurer
Lisa Frazier.
Second-half property tax payments
for 2020 are due on or before Monday,
Nov. 2, because Oct. 31 falls on a Sat-
urday.
A delinquent interest of 1% will be
charged Tuesday, Nov. 3.
In-person property tax payment
transactions should be limited to those
transactions that cannot be handled
alternatively, such as cash.
Taxpayers are strongly encouraged
to use the following’options for mak-
ing their second-half property tax pay-
ments:

from skin.
While the squash is roast-
ing, sauté the onion in a
heavy stock pot with olive
oil until the onion is trans-
lucent. Add the ginger and
sauté until fragrant.
Add the roasted squash
to the pot and add enough
water to make a thick sauce.
The amount of water will
vary depending on the size
of your squash. Add the coconut milk
and curry powder and'salt and bring ,
the soup to a low simmer making
sure it doesn’t boil. I
Simmer the soup for 10 minutes
to let the flavors mix. I like roasting
the squash first because I find I don’t
need to puree the soup; however, if
you like a smoother soup you can pu-
ree with an immersion blender. Serve
with lime and sour cream garnish.
You can, choose any variety of
'winter squash to make this soup.
Try your favorite. You can also vary
it with spices such as pumpkin spice
and garnish it with chopped spiced
pecans, or thyme and rosemary with
bacon. The options are endless with
squash soup it is the perfect carrier
for all your favorite spice combina-
tions.
