14-oz. can sweetened condensed
milk
tsp. real vanilla
pinch salt
dash patience
Preparation:
Slather a 9-by-9-inch square
pan with butter and set it to the
side. Melt the cup of butter in a
heavy-duty 3-quart saucepan.
Add the brown sugar and salt.
Stir thoroughly.
Stir in the corn syrup. Slowly
add the condensed milk, stirring
constantly. Grab your patience.
The magic begins...
Add patience.
Cook over medium-low to me-
dium heat, stirring occasionally,
to 247 degrees Fahrenheit, which
is just past the "firm-ball" stage.
This will take about 20 to 25 min-
utes. Add more patience as need-
ed. This counteracts the intoxica-
tion from the aroma.
Remove from heat and stir in
the vanilla.
Pour the liquid heaven into
the buttered pan. Cool to room
temperature - more patience re-
quired.
When cool, use a knife dipped
in ice water to cut. Remove the
patience, testing the first cara-
mel and the second. Cut into
squares and wrap in plastic wrap
or waxed paper. Discard remain-
ing patience.
Makes 21/2 pounds.
For chocolate caramels, add
two 2-oz. squares of unsweetened
chocolate - cut into pieces - along
with the sweetened condensed
milk. For chocoholics, add a touch
more patience.

During their 25th annual, free

a live musical performance.
This year's program will fea-
ture three concerts on three Fri-
days in a row: December 7, 14
and 21. Meals and music will be
