Xinh: ‘She always tried to see the best in everyone’-

‘tough love’ to those she truly cared about.
She always tried to see the best in every—
one and gave opportunities to many. She
had a diverse group of employees and
made all feel welcome. Her passion was in
her food, and you could tell from every bite
you took. One of the best chefs in the Pa-
cific Northwest! She loved and missed her
husband dearly and would always bring
him up in every conversation. I was hon—
ored to watch her cook many times and I’ll
never forget the things she taught me.”
Deatra Harrington wrote she was
grateful to have taken Xinh’s geoduck
chowder class.
“She processed two geoducks in front
of us, made it seen easy, delicious chow—
der we enjoyed and gave us the recipe she
used. Went to her restaurant when we
first moved home from New York in 2002.
She came and spoke to us, enjoyed my
husband’s New York accent. That warm
smile showed she knew life and chose to
stay ‘on the sunny side.’ Thank you, Chefl”
“Our friendship began when I was in
culinary school and competed at the Oys-
terF est Seafood Cookofi' at the West Coast
Oyster Sh Licking Championship in 2001
and unfortunately the last time I compet—
ed was the last time I saw her,” Kerinlee
Lewis wrote. “She always had the warmest
smile at the judging table and put the com-
petitors at case. We competed against each
other often and she always stopped by to
wish me luck. She will be missed by many.
1 will miss her! Happy Cooking, Xinh!”
Many experienced her warmth at her
restaurant on West Railroad Avenue.
“Even though it was my first time on-
joying her food. Xibh made me feel like
she had known and loved me forever,”
wrote Carol Ann. “She prepared food es—
pecially for us and she was almost embar—
rassed at our delight. Xinh was humble,
wise, creative and beautiful."
Carol Seeley remembers Xinh’s “glow—
ing smile, delicious cuisine, and caring for
customers.” '
